Wifey Wednesday - The Discipline Game

Having kids is supposed to mean a lot of things. One main aspect of parent hood is having to discipline them. Now, we all know parents who fail MISERABLY in this arena. However, I'm talking to the vast majority of us out there that realize that by having children, we have a duty to discipline them. It's your JOB to parent them, NOT to be their buddy.

A blog that I adore greatly, To Love Honor and Vacuum has an entry on her blog featuring this very topic for her "Wifey Wednesday" feature and I felt compelled to share this nugget with you. Since it truly "takes a village..." I thought if we all weighed in with our thoughts and opinions, surely there's a nugget of gold for each of us out there that will work wonders in our own homes.

Her discussion today deals with maintaining a united front when disciplining children. She gives several examples. I can say that the times (which are few and far between) that we haven't agreed, we've definitely talked to one another in private about what we felt worked and didn't work regarding whatever discipline was dished out. Generally (ok, well always) it's been able to be talked through and worked out. Parenting is definitely an evolving, ever-changing process that we all must continually adapt to.

Some of the "rules of engagement" she lists for childhood discipline is to present a united front (check), never use your child as a sounding board for your disappointment in your spouse (not check), talk to your spouse about disagreements when the air is clear, and be open to bring in uninterested third parties if you need reinforcements for a disagreement

My "uncheck" from above isn't typically when Daddy is dishing out discipline, it's typically if he's in a bad mood. I will say something like, "He's not a morning person, you know." Because -- frankly -- he's not. And he gets really grumpy in the morning if something doesn't go his way. If someone gets their head bit off, I will try to make it better because I think that's not a great way to start off your day. I probably should find another way to handle it but... I will make an excuse for him...

Honestly, I don't find that we have a problem what so ever with maintaining a united front when it comes to discipline. Andy is an amazing father. Even when I seem to hold onto those grudge feelings of "how could you" when my children do something. He is quick to forgive, not that our children go undisciplined because of his forgiveness -- don't read it that way. He just has an amazing heart and our children truly "get" when they've crossed that proverbial line so that they bear the guilt of knowing they've hurt you when they've truly erred. I really have a lot to learn from him and this gift of parenting he possesses.

What I seem to have a problem with is not so much maintaining a united front, but the fact that my oldest seems to think that if something happens that he doesn't like, he's compelled to come tell me about it. I find this odd.

For instance, night before last at the dinner table, Andy had given a "time warning" because Josh tends to take quite a while to eat dinner. He is an EXTREMELY slow eater. He can be the first at the table... and still be the last up. It's not because he gets up or piddles, he just eats ridiculously slow. It was late. I'm talking 9pm late. Their bedtime is 8pm when we have no sports or anything going on. Drew had had a baseball game, however so they weren't home until around 8. Both boys needed baths, to eat, etc. It was a late night. Benjamin was tired and hungry. I took him to my room to nurse. Drew was getting bathed and I heard Andy tell Josh more than once that he needed to hurry. I pretty much tuned everything else out.

Minutes later Josh was coming in while I was changing a diaper to wish me good night. He stopped by the foot of the bed and said, "I'm still hungry." I asked if he finished his dinner (there was plenty on his plate that should have prevented any immediate hunger pangs). He said (in a somewhat whiny, tattle-tale voice), "I tried to but daddy took it away." I just said, "Oh, okay." I asked why he did that and he gave me some lame excuse. I asked if he'd come into the bedroom to tattle on Daddy. He said no, that he was there to tell me goodnight. I did not believe him at all. I mean, I KNOW he WAS there to say goodnight but... the fact that he was ALSO there to rat Andy out made me mad. Andy's not going to let him starve. I do like that Josh feels comfortable to come to me to talk to me about things but I don't want him putting ME in the middle of an issue he has with Andy. That is between Andy and Josh.

Honestly, when he does this, I have no idea what to say but he does it ANYTIME I'm not there to witness an exchange between them. It is so freakin annoying and I really want it to stop. I have no idea why he's compelled to try to be a tattle tail but it's beyond irritating. This is my discipline dilemma so I'd love to hear any pearls from other moms on how to deal with this!

Menu PLAN Monday

Notice the emphasis in the title of the word "Plan." I did this on purpose. Last week we didn't stick to the plan. Regardless of this fact, having a plan is better than NOT having a plan. As I always say, when you fail to plan, you plan to fail. Most times, that's so very true!

However, you will see that although I AM a planner in almost every aspect of my life, I am not so inflexible that we can't change the meal plans and so sometimes--we do. And, I'm so very okay with that. So, this week's menu will have some repeats but it's because of several factors: a) our "gifted" meals fed quite more than one day's worth of servings and b) our extra-curricular plans took a little longer and thus, we ate out, got take-out or ordered delivery.

MONDAY
B: Cereal
L: Sonic (special request by the little people)
D: Grilled balsamic chicken, brown rice, steamed broccoli with cheese, salad and homemade chocolate chip cookies

TUESDAY
B: Eggs, ham steaks and toast
L: Grilled chicken salads (from last night's leftovers)
D: Gifted from a neighbor

WEDNESDAY
B: Oatmeal and fruit
L: PB&J with salad
D: Crock pot cranberry/apple pork loin, noodles with alfredo sauce and freshly steamed green beans along with some whole wheat dinner rolls

THURSDAY
B: Cereal
L: Subway
D: Gifted from a neighbor

FRIDAY
B: Homemade pancakes and fresh strawberries
L: leftovers
D: Pot roast with veggies in the crock pot

SATURDAY
B: Sausage, biscuits and gravy, fresh fruit and/or juice
L: Cold roast beef sandwiches, pasta salad
D: OPEN

SUNDAY
B: OPEN (we may go out to breakfast)
L: Leftovers
D: quickie tacos (chips, taco meat, lettuce, tomato, sour cream, picante and cheese) in a bowl

I'm excited to know that I can actually have a plan this week. The last two weeks have been so ridiculously unstable with Spring Break and the whole OAMC thing, sports practices, etc. that I knew it'd be ridiculous for me to even try! But we have a plan this week -- woo hoo! Recipes marked with ** follow below the plan. Enjoy!

Monday

****I'm leaving Saturday and Sunday both fairly flexible since we're not sure what our plans are yet (it all depends on this bizarre Texas weather)

Fettuccini Carbonera

1/4 c. butter
1 lb fettucini
4 eggs
1 cup grated Parmesan cheese (the kind in the plastic jar with the green lid)
1/2 c. whipped cream
1/4 c. parsley
8 oz bacon
Pepper

Directions:

Let the butter, eggs and cream stand at room temperature for 2-3 hours. Cook bacon until brown, drain and crumble. Heat serving dish in the oven at 250 degrees about 10 minutes (I actually use a huge metal stock pot to mix it in and so I put THAT in the oven instead of a typical "ceramic or glass serving dish." At the same time, cook the fettuccini in water for 15 minutes. Beat the eggs adn cream just until blended. When pasta is tender but just slightly firm, drain in collander. Toss pasta and butter in heated serving dish. Then pour in egg mixture and toss to coat. Add bacon, cheese and parsley and again, mix until well coated. I find using a pasta serving spoon to mix this works best. Serve immediately. It's DELICIOUS! We NEVER have any left over!



Stuffed Shells Florentine
(this is mostly adapted from the Pampered Chef's Main Dishes recipe book)

box uncooked jumbo pasta shells (I use the whole box since I find many do break and/or tear so to specify a certain number is silly)
15 oz part-skim ricotta cheese
10 oz package frozen chopped spinach, thawed, drained and squeezed dry
2 cups Italian cheese blend, divided
1 1/2 cups half-and-half, divided
1/2 cup fresh Parmesan cheese, grated
2 tsp. minced garlic
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
1 large jar of Prego Fresh Mushroom spaghetti sauce (LARGE jar)

DIRECTIONS:
Preheat oven to 350. Cook shells according to package directions; drain. Next, I use my stand up mixer for the following: In a large bowl combine the ricotta cheese, spinach, 1 1/2 cups of the shredded Italian cheese blend, 1/2 cup of the half and half, 1/4 cup of the fresh Parmesan cheese, garlic and dried herbs. mix well and set aside. In a smaller bowl, mix the spaghetti sauce with the remaining half and half (sometimes, I even add MORE! GASP -- makes it SO creamy) until blended. Pour about 1/2 into the bottom of your baking dish. Then using a small scoop, fill each shell with the cheese mixture and set into the baking dish. Once all the space is full, pour the remaining sauce over the shells and then sprinkle with the remaining Parmesan cheese. Cover, bake 40 minutes. Remove the lid and sprinkle with the remaining Italian cheese blend shreds and cook about 5 more minutes. Remove from oven and let stand about 10 minutes. DELICIOUS

Cheese Enchiladas
1 package of corn tortilias
veggie oil
1 box of Velveeta cheese (I use 2%)
1-2 large onions, diced and sauteed
1-2 # hamburger meat, browned
1 package of Williams chili mix (it's in a silver package with all the gravy mixes)
1-2 cans of diced tomatoes

Tools needed: tongs, 9x13 baking dish, frying pan, sautee pan

Directions:
Dice and saute onion in a Tbsp or two of oil. Set aside. Cut the cheese (no pun intended) into 1/2" pieces and then cut that piece into thirds making little strips of cheese. To prepare the corn tortilias for rolling, heat up some veggie oil over medium heat in a shallow frying pan. Insert one tortilia and make sure that it is fully submerged. You want it to be saturated but not "cook". It will start to sizzle -- remove it immediately. I place mine into a glass pie pan. Set aside to cool. Begin cooking the hamburger meat. Once it has been drained, add the diced tomatoes, about 1/4 cup of water and the chili seasoning mix. Simmer for a few minutes. Now comes the assembly.

To assemble your enchiladas you'll take your plate/tray of prepared corn tortilias and insert two of the cheese strips in the center. Spoon in as much of the onion as you'd like and then roll it up. Place it lengthwise in your baking dish. Once you've filled all the space in your baking dish, pour the chili mixture over top. Cover with foil. Bake at 350-375 for about 30 minutes.

Menu Plan Monday

Menu Plan Monday Pictures, Images and Photos

A hearty hi-ho to everyone this week! It's going to be a BUSY one this week so I'm looking for easy schmeezie and convenience! I've got too many irons in the fire and don't want to drop any of the 6,532 balls in the air that I'm currently juggling.

Monday:
B: Cereal
L: Lunch w/daddy and the boys
D: Burgers (I bought these AWESOME burgers from Central Market that have all the ingredients inside them... mine is a bacon cheddar burger. I got hubbs the one that has jalapeno and some other "stuff" in it. The boys like plain Jane burgers so they get that!) Lettuce, tomato, red onion and baked beans! Drew picked out some double chocolate chunk cookies to go with it for dessert. (yuck! I'm not a chocolate fan!)

Tuesday:
B: Sausage, homemade biscuits (Bisquick recipe) and gravy
L: Egg salad sandwiches, chips
D: Chicken a la king

Wednesday:
B: Cinnamon Rolls (I'd like to try The Pioneer Woman's recipe but not this week!) and Pigs n blankets w/juice
L: Leftovers or frozen dinners (Healthy Choice/Smart Ones -- cleaning out the freezer!)
D: Chili with fritos, cheese and onions

Thursday:
B: Taquitoes (flour tortilias, eggs, cheese, tater tots, sausage)
L: Subway (it's a weekly tradition)
D: OPEN (my son has football practice from 5:45 - 7:45)

Friday:
B: Pancakes, bacon
L: chicken nuggets/strips (whatever is in the freezer)
D: Nachos (big huge chips, refried beans, cheddar cheese, jalapenos, pico, guacamole, I'm in complete YUMMINESS)

Saturday:
Josh and I will be camping with our Webelos den at Sid Richardson so I'm leaving this up to the boys at home to do whatever they want. I'm sure it will be a visit to Drew's favorite breakfast restaurant "The Snooty Pig" for some pancakes and bacon or his all-time 2nd favorite -- DONUTS!! Josh and I will be eating breakfast burritoes, sandwiches/chips for lunch and then foil pack (a.k.a. "hobo burgers") at the campsite.

Sunday:
B: Breakfast at camp -- Boil in a bag omelettes (teaching the Webelos how to cook this will be fun!)
L: Josh and I will grab something on the road going home from camp as he has a 2-4 football practice to be ready for.
D: We're having a cookout with the football team.
