Once A Month Cooking - Part A

So, I got my new books in and have been reading bits and pieces of them as time allowed to try to make my master plan up for my first attempt at Once a Month Cooking (OAMC) in hopes of having home-cooked, nutritious meals ready for when Mr. He-Who-Has-No-Name arrives next month.

The one constant that I'm learning from these books is that you HAVE to have a plan. The fear I have is that if I just take all these random recipes that they are giving in their books, I'm going to wind up with a freezer full of meals, that no one will eat. Thus, adjustments HAVE to be made.

I have a regular rotation of meals in my repertoire that my family enjoys. Why fix something that isn't broken? Therefore, what I've decided to do is to (hopefully) create a master list (THIS TIME) of MOSTLY family favorites (I'll have enough on my plate with a newborn and no patience to deal with picky eaters, I fear) and I will try to incorporate about 1/3 new recipes that SEEM like they would be palatable for my family.

I'm going to pick and choose a few recipes from each book I think and then I will post my master list back here when I've got it finalized.

One thing I don't want to do is to pick like 6 meals and make 3 of each. I really don't want to eat spaghetti more than once or twice a month and that goes with most of the meals. I really DO enjoy variety in my diet. I think my trouble will be in finding really good sides to go with each. If I'm preparing meat entrees (for the most part) I will still need to have a good selection and variety of sides on hand to go with them.

So... for now, the planning is still underway... I'm hoping to do a stop at Costco today for a huge selection of meat and maybe some produce to freeze and then steam or incorporate into meals. We shall see. Otherwise, Costco will definitely be tomorrow because this week is MY WEEK to cook! It's now or never baby!

Good Luck!
I'm working on my OAMC plan (have been for a month!) I'm worried about the same things you are - that if I fix a bunch of new things, my boys won't eat them. So what I think I'm going to do is fix some of them during the next 2 weeks leading up to my cooking day and see what they'll eat and what they won't. Other than that, I'm doing the same thing you are, fixing things I KNOW they will eat.
I'm also not crazy about eating the same thing over and over.I'm not sure what to do about that yet. LOL I'm thinking I might go ahead and fix them and have them in the freezer. But I'm not sure how long they'll be good for.
As you can tell, LOTS more planning and researching in my future!

I tried to do that before my daughter was born. My hubby decided that onions gave the baby gas and went into the kitchen in the middle of the night to put a 3 lb. bag of onions down the disposal.

He didn't like me eating my pre-made meals that contained onions.

I wish you the best in banking all of that food!

Oh, I totally know how you feel. Good luck. That's why I love recipe blogs, you can see pictures, and here about if it's actually good or not!

That is definitely my learning curve with OAMC. I will go get something else, and find something that is luckily still good, but I am new at this, too so maybe in two months it won't be!
If you can even try relishrelish.com for a month or two, they have some great frozen options as well.

I did this before Jayden was born. I made spaghetti sauce, Swedish meatballs, taco meat, chili, grilled chicken strips and several kinds of muffins and breads. I didn't do it all in one day. I made ONE thing each night for about a week and a half but quadrupled the batch and then broke it down int meal sized portions and froze it. I even went so far as to grate cheese and freeze it. If figured my hubs could manage to both shop for and cook dried pasta, tortillas, lettuce, tomatoes, and the like. We also got several meals made for us by my bible study...so we had chicken pot pie and lasagna that were freezable when they came to us. When the ladies brought it (because they ALWAYS seemed to bring too much) I would just divide it in half before we even ate any and put 1/2 in the freezer. I think we ate for almost two months from our freezer (it was just the two of us at the time so we were able to stretch that food a lot!). I TOTALLY love this idea...alas, now that I'm working, its sometimes hard, but we still double or triple batches of things like spaghetti sauce and grilled chicken. It doesn't take anymore time to cook a double batch, right? and then I have something I can trust in my freezer without having to resort to the frozen foods section at the grocery. I do remember that I planned like crazy for it...excited to see what you come up with and how it works for you!

I've been on a kick of a new dish every night. I'm such a nut and can't help it! I also like when I blog it because then it's my own little recipe guide ... lol Only the good ones that we like make it to the blog.
